Peanut Butter Cookies

This recipe works best in multi-cookers with a large tray, like the Ninja Flip - but can be adapted for smaller appliances by baking in batches, or using a multi-layer rack if your appliance supports it.

  1. Mix peanut butter, both sugars, egg, and vanilla until smooth.
  2. Stir in baking soda and salt.
  3. Line your tray or pot with parchment paper and drop dough by rounded tablespoons, spacing about 2 inches apart.
  4. Press each ball with a fork in a crosshatch pattern to flatten slightly.
  5. Bake at 325°F for 10–12 minutes, until edges are set but centers are still soft.
  6. Let cool on the pan for 5 minutes before transferring.
