Veggie Jerky
Chewy, savory mushroom jerky with a smoky soy marinade.
Ingredients
- 1 lb king oyster mushrooms (or portobello), sliced 1/4" thick
- 3 tbsp soy sauce
- 1 tbsp maple syrup
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 1 tsp liquid smoke (optional)
Instructions
- Whisk together soy sauce, maple syrup, smoked paprika, garlic powder, onion powder, pepper, and liquid smoke.
- Toss mushroom slices in the marinade and let sit for at least 30 minutes.
- Arrange slices in a single layer on the dehydrator rack. Don't overlap.
- Dehydrate at 155°F for 5–7 hours, flipping halfway through.
- Jerky is done when it's dry and chewy but still pliable.
Notes
King oyster mushrooms work best because of their dense, meaty texture. Store in an airtight container for up to 2 weeks.
