French Onion Slow Cooker Soup

Meltingly tender caramelized onions in a rich, savory broth.

  1. Toss onions with melted butter, olive oil, and sugar in the pot.
  2. Slow cook on low for 10–12 hours or high for 5–6 hours, until onions are deeply golden and caramelized.
  3. Add wine, broth, thyme, soy sauce, salt, and pepper. Stir well.
  4. Continue cooking on high for 30 more minutes to meld flavors.
  5. Ladle into oven-safe bowls. Top with toasted baguette slices and gruyere. Broil until cheese is bubbly and golden.

Notes

The long, slow cook does all the caramelizing work for you; no stirring at the stove. The soy sauce adds depth without a noticeable soy flavor. For a richer broth, use a mix of vegetable and mushroom stock.
