Shakshuka
Eggs poached in a spiced tomato and pepper sauce.
Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 1 red bell pepper, diced
- 4 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/4 tsp cayenne pepper
- 1 can (28 oz) crushed tomatoes
- Salt and pepper
- 6 eggs
- Fresh cilantro and crumbled feta for serving
- Crusty bread
Instructions
- Set pot to sauté. Heat olive oil and cook onion and bell pepper until soft, about 5 minutes.
- Add garlic, cumin, paprika, and cayenne. Cook for 1 minute until fragrant.
- Pour in crushed tomatoes, season with salt and pepper, and simmer for 10 minutes until slightly thickened.
- Make 6 wells in the sauce and crack an egg into each. Cover and sauté on low for 5-8 minutes until whites are set but yolks are still runny.
- Top with cilantro and feta. Serve straight from the pot with crusty bread.
