Instructions

  1. Set pot to sauté on low heat. Melt butter.
  2. Whisk eggs, milk, salt, and pepper together in a bowl.
  3. Pour egg mixture into the pot.
  4. Stir gently with a spatula, pushing eggs from the edges toward the center as they set.
  5. Cook for 2–3 minutes, stirring often, until eggs are just barely set.
  6. Turn off the pot immediately and serve topped with chives.

Notes

Remove the eggs while they still look slightly underdone; remaining heat will finish them. For mixins like cheese, spinach, or herbs, fold in during the last 30 seconds.
