A crustless quiche loaded with vegetables and cheese.

Instructions

  1. Whisk eggs, milk, salt, pepper, and nutmeg in a bowl.
  2. Stir in cheese and vegetables.
  3. Grease the pot and pour in the egg mixture.
  4. Bake at 325°F for 35–40 minutes, until set in the center and lightly golden.
  5. Let cool for 5 minutes before slicing.

Notes

Works great for meal prep; slices reheat well. Try different combos; sun-dried tomato and feta, or spinach and gruyère.
