Quiche
A crustless quiche loaded with vegetables and cheese.
Ingredients
- 6 eggs
- 1/2 cup whole milk or cream
- 1 cup shredded cheese (gruyère, cheddar, or Swiss)
- 1/2 cup diced vegetables (spinach, mushrooms, bell peppers, or onions)
- Salt and pepper
- Pinch of nutmeg
- Butter for greasing
Instructions
- Whisk eggs, milk, salt, pepper, and nutmeg in a bowl.
- Stir in cheese and vegetables.
- Grease the pot and pour in the egg mixture.
- Bake at 325°F for 35–40 minutes, until set in the center and lightly golden.
- Let cool for 5 minutes before slicing.
Notes
Works great for meal prep; slices reheat well. Try different combos; sun-dried tomato and feta, or spinach and gruyère.
