Pulled Pork
Juicy, shreddable pork shoulder in a fraction of the usual time.
Ingredients
Sauté
- 1 tbsp oil
- 3 lbs boneless pork shoulder, cut into 4 large chunks
- 1 onion, quartered
Pressure cook
- 1 cup chicken broth
- 2 tbsp brown sugar
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 1/2 tsp cayenne
- Salt and pepper
After cooking
- 1 cup BBQ sauce
- Buns, coleslaw, and pickles for serving
Instructions
- Mix brown sugar, paprika, garlic powder, onion powder, cumin, cayenne, salt, and pepper. Rub over pork chunks.
- Set pot to sauté. Heat oil and sear pork on all sides, about 2 minutes per side. Remove.
- Add onion and broth, scraping up any browned bits.
- Return pork to the pot.
- Pressure cook on high for 60 minutes, then natural release for 15 minutes.
- Shred pork with two forks. Toss with BBQ sauce.
- Serve on buns with coleslaw and pickles.
