Pinto Beans from Dried
Creamy, flavorful pinto beans cooked from dried with no soaking.
Ingredients
Sauté
- 1 tbsp oil
- 1 onion, diced
- 4 cloves garlic, minced
- 1 tsp cumin
- 1/2 tsp chili powder
Slow cook
- 1 lb dried pinto beans, rinsed and picked over
- 6 cups vegetable broth
- 1 bay leaf
- Salt
Instructions
- Set pot to sauté. Heat oil and cook onion until softened, about 4 minutes.
- Add garlic, cumin, and chili powder. Stir for 1 minute.
- Add beans, broth, and bay leaf.
- Slow cook on low for 8-10 hours or high for 4-5 hours, until beans are creamy and tender.
- Discard bay leaf. Season with salt.
Notes
Don't add salt until after cooking. Salting too early can toughen the skins.
