Pinto Beans from Dried

Creamy, flavorful pinto beans cooked from dried with no soaking.

Instructions

  1. Set pot to sauté. Heat oil and cook onion until softened, about 4 minutes.
  2. Add garlic, cumin, and chili powder. Stir for 1 minute.
  3. Add beans, broth, and bay leaf.
  4. Slow cook on low for 8-10 hours or high for 4-5 hours, until beans are creamy and tender.
  5. Discard bay leaf. Season with salt.

Notes

Don't add salt until after cooking. Salting too early can toughen the skins.
