Fluffy pancakes made one at a time on the sauté setting.

Instructions

  1. Whisk flour, sugar, baking powder, and salt in a bowl.
  2. In a separate bowl, whisk egg, milk, and melted butter.
  3. Pour wet ingredients into dry and stir until just combined.
  4. Set pot to sauté on low heat. Add small pat of butter.
  5. Pour about 1/4 cup of batter into the center of the pot.
  6. Cook until bubbles form on the surface and edges look set, about 2–3 minutes. Flip and cook another 1–2 minutes.
  7. Repeat with remaining batter. Serve with maple syrup and butter.

Notes

The pot's flat bottom runs hot, and pancakes burn easily on high.
