Loaded Vegetarian Nachos
Crispy tortilla chips piled high with chili and cheese.
Ingredients
Nachos
- 1 large bag tortilla chips
- 2 cups shredded Mexican-blend cheese
Chili/Beans
- I've made this with the vegetable pressure cooker chili, but you can also use canned refried beans or black beans seasoned with taco spices.
Toppings
- Avocado or guacamole
- Sour cream
- Fresh cilantro
- Salsa or pico de gallo
- Lime wedges
- Sliced scallions
Instructions
- Spread a single layer of tortilla chips in the pot or on the broiler tray.
- Top with a layer of chili/beans and a layer of cheese. Repeat layers until all chips are used, ending with a layer of cheese on top.
- Broil for 5–7 minutes, until the cheese is melted and bubbly.
- Top with avocado, sour cream, cilantro, salsa, lime juice, and scallions. Serve immediately.
