Mashed Potatoes
Creamy, buttery mashed potatoes in a fraction of the usual time.
Ingredients
- 3 lbs Yukon Gold potatoes, peeled and quartered
- 1 cup water
- 4 tbsp butter
- 1/2 cup whole milk or cream, warmed
- Salt and pepper
Instructions
- Place potatoes and water in the pot.
- Pressure cook on high for 8 minutes.
- Quick release.
- Drain most of the water, leaving a couple tablespoons in the pot.
- Add butter and mash to your desired texture.
- Stir in warm milk or cream. Season with salt and pepper.
Notes
Yukon Golds make the creamiest mash, but russets work too; they'll just be a bit more fluffy. Add roasted garlic or sour cream for extra flavor.
