Fried Rice
Quick, savory fried rice with vegetables and scrambled eggs.
Ingredients
- 3 cups cooked rice (day-old or cooled)
- 2 eggs, beaten
- 1 tbsp sesame oil
- 1 tbsp vegetable oil
- 3 scallions, sliced (whites and greens separated)
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots
- 2 tbsp soy sauce
- 1 tsp rice vinegar
Instructions
- Set pot to sauté on high. Add vegetable oil.
- Pour in beaten eggs, scramble until just set, about 1 minute. Remove and set aside.
- Add sesame oil, scallion whites, and garlic. Stir for 30 seconds.
- Add peas and carrots, cook for 2 minutes.
- Add rice, breaking up any clumps. Stir-fry for 3-4 minutes until heated through and slightly crispy.
- Add soy sauce and rice vinegar, toss to coat.
- Return scrambled eggs, breaking them into pieces. Top with scallion greens.
Notes
Cold or day-old rice works best. Freshly cooked rice has too much moisture and won't crisp up.
