  1. Set pot to sauté on high. Add vegetable oil.
  2. Pour in beaten eggs, scramble until just set, about 1 minute. Remove and set aside.
  3. Add sesame oil, scallion whites, and garlic. Stir for 30 seconds.
  4. Add peas and carrots, cook for 2 minutes.
  5. Add rice, breaking up any clumps. Stir-fry for 3-4 minutes until heated through and slightly crispy.
  6. Add soy sauce and rice vinegar, toss to coat.
  7. Return scrambled eggs, breaking them into pieces. Top with scallion greens.

Notes

Cold or day-old rice works best. Freshly cooked rice has too much moisture and won't crisp up.
