Falafel
Crispy, golden falafel without deep frying.
Ingredients
- 1 can (15 oz) chickpeas, drained and patted very dry
- 1/4 cup fresh parsley, packed
- 1/4 cup fresh cilantro, packed
- 3 cloves garlic
- 1/2 small onion, roughly chopped
- 1 tsp cumin
- 1/2 tsp coriander
- 1/4 tsp cayenne
- 2 tbsp flour
- Salt and pepper
- Spray oil
- Pita, tahini sauce, and pickled onions for serving
Instructions
- Add chickpeas, parsley, cilantro, garlic, onion, cumin, coriander, cayenne, flour, salt, and pepper to a food processor.
- Pulse until the mixture is coarse and holds together when pressed; don't over-process into a paste.
- Form into 10–12 small patties, about 1/2" thick.
- Arrange in a single layer in the basket. Spray generously with oil on both sides.
- Air fry at 375°F for 12–15 minutes, flipping halfway through, until golden and crisp.
- Serve in pita with tahini sauce, pickled onions, and fresh vegetables.
Notes
The mixture should be slightly crumbly but hold its shape. If it's too wet, add a tablespoon more flour. Chill the patties for 15 minutes before cooking for easier handling.
