  1. Add chickpeas, parsley, cilantro, garlic, onion, cumin, coriander, cayenne, flour, salt, and pepper to a food processor.
  2. Pulse until the mixture is coarse and holds together when pressed; don't over-process into a paste.
  3. Form into 10–12 small patties, about 1/2" thick.
  4. Arrange in a single layer in the basket. Spray generously with oil on both sides.
  5. Air fry at 375°F for 12–15 minutes, flipping halfway through, until golden and crisp.
  6. Serve in pita with tahini sauce, pickled onions, and fresh vegetables.

Notes

The mixture should be slightly crumbly but hold its shape. If it's too wet, add a tablespoon more flour. Chill the patties for 15 minutes before cooking for easier handling.
