Instructions

  1. Whisk together cornmeal, flour, sugar, baking powder, and salt.
  2. In a separate bowl, mix buttermilk, melted butter, and egg.
  3. Combine wet and dry ingredients. Stir until just mixed.
  4. Grease the pot and pour in the batter.
  5. Bake at 350°F for 25–30 minutes, until golden on top and a toothpick comes out clean.

Notes

Serve warm with butter and honey. Pairs perfectly with chili or soup.
