Instructions

  1. Add rice, broth, ginger, sesame oil, and a pinch of salt to the pot.
  2. Pressure cook on high for 25 minutes, then natural release for 10 minutes.
  3. Discard ginger slices. Stir well; the rice should be completely broken down and porridge-like.
  4. Season with salt. Serve in bowls with your choice of toppings.

Notes

The congee will thicken as it sits. Add splashes of broth or water when reheating to get it back to your preferred consistency. For a richer version, swap half the broth for coconut milk.
