Chicken Tikka Masala
Tender chicken in a creamy, spiced tomato sauce.
Ingredients
Sauté
- 1 tbsp oil
- 1 onion, finely diced
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 2 tsp garam masala
- 1 tsp cumin
- 1 tsp turmeric
- 1 tsp smoked paprika
- 1/2 tsp cayenne
Pressure cook
- 1.5 lbs boneless skinless chicken thighs, cut into bite-sized pieces
- 1 can (14 oz) crushed tomatoes
- 1/2 cup water
- Salt
After cooking
- 1/2 cup heavy cream
- Fresh cilantro
- Basmati rice or naan for serving
Instructions
- Set pot to sauté. Heat oil and cook onion until softened, about 5 minutes.
- Add garlic, ginger, garam masala, cumin, turmeric, paprika, and cayenne. Stir for 1 minute.
- Add chicken, crushed tomatoes, water, and salt. Stir well.
- Pressure cook on high for 8 minutes, then quick release.
- Stir in heavy cream. Set to sauté and simmer for 2-3 minutes to thicken.
- Serve over rice or with naan, topped with cilantro.
