Black Beans
Dried black beans cooked from scratch with cumin and garlic; no soaking needed.
Ingredients
- 1 lb dried black beans, rinsed
- 1 onion, diced
- 4 cloves garlic, minced
- 1 tbsp cumin
- 1 tsp smoked paprika
- 1 bay leaf
- 4 cups water or vegetable broth
- 2 tbsp olive oil
- Juice of 1 lime
- Salt and pepper
Instructions
- Set pot to sauté. Heat oil and cook onion until softened, about 4 minutes.
- Add garlic, cumin, and paprika. Stir for 1 minute.
- Add beans, bay leaf, and water. Stir.
- Pressure cook on high for 30 minutes.
- Natural release for 15 minutes, then quick release.
- Discard bay leaf. Add lime juice, salt, and pepper to taste.
- For creamier beans, mash some against the side of the pot and stir.
