Instructions

  1. Set pot to sauté. Heat oil and brown the ground beef, breaking it up, about 5 minutes. Drain excess fat.
  2. Add onion and bell pepper, cook for 3 minutes.
  3. Add garlic, chili powder, cumin, and smoked paprika. Stir for 1 minute.
  4. Add crushed tomatoes, beans, broth, and tomato paste. Stir well.
  5. Slow cook on low for 6-8 hours or high for 3-4 hours.
  6. Season with salt and pepper. Serve topped with cheddar, sour cream, and scallions.
