Beef Chili
A thick, smoky chili with ground beef, beans, and peppers.
Ingredients
Sauté
- 1 tbsp oil
- 1 lb ground beef
- 1 onion, diced
- 1 red bell pepper, diced
- 4 cloves garlic, minced
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
Slow cook
- 1 can (28 oz) crushed tomatoes
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) black beans, drained
- 1 cup beef broth
- 1 tbsp tomato paste
- Salt and pepper
After cooking
- Shredded cheddar, sour cream, and sliced scallions for serving
Instructions
- Set pot to sauté. Heat oil and brown the ground beef, breaking it up, about 5 minutes. Drain excess fat.
- Add onion and bell pepper, cook for 3 minutes.
- Add garlic, chili powder, cumin, and smoked paprika. Stir for 1 minute.
- Add crushed tomatoes, beans, broth, and tomato paste. Stir well.
- Slow cook on low for 6-8 hours or high for 3-4 hours.
- Season with salt and pepper. Serve topped with cheddar, sour cream, and scallions.
